1. melt butter 2. add flour, stir vigourously 3. mix in a bit of milk until thickened 4., 5., 6. add more milk, bit by bit, stirring constantly to remove lumps 7. add nutmeg 8. remove from heat and mix in egg yolk

1. Brown meat 2. Add onion and cook until softened 3. Add minced garlic 4. (unlike picture) Transfer meat to bowl 5. Add wine to de-crust the brownings 6. Boil and reduce 7. Add meat back in to reduction 8. 9. Add herbs and spices and let stew for 20-30mins.
1. Sprinkle breadcrumbs at the bottom of oven dish 2. Place sliced potatoes (boiled) 3. Place breaded eggplants 4. Spoon on a layer of meat sauce 5. Cover in feta cheese then add another layer of eggplants 6. Sprinkle eggplants with parmesan 7. Pour bechamel over the whole thing 8. Bake until golden 9. Doesn't it look good close-up?
