Dry drained eggplants with paper towel, dip in eggwhite, cover in breadcrumbs and bake for 30mins.
1. Brown meat 2. Add onion and cook until softened 3. Add minced garlic 4. (unlike picture) Transfer meat to bowl 5. Add wine to de-crust the brownings 6. Boil and reduce 7. Add meat back in to reduction 8. 9. Add herbs and spices and let stew for 20-30mins.
